  • 2 pounds Beef Chuck Roast, cut into 2-inch cubes
  • 4 medium Carrots, sliced into rounds
  • 1 large Yellow Onion, diced
  • 4 cloves Garlic, minced
  • 4 medium Yukon Gold Potatoes, chopped
  • 2 tablespoons Tomato Paste
  • 4 cups Beef Broth
  • 3 tablespoons Olive Oil
  • 4 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup All-Purpose Flour
  • 2 tablespoons Butter

Instructions

  1. Preheat your Dutch oven over medium-high heat.
  2. Dredge beef chunks in flour. Sear in batches with olive oil until browned, then set aside.
  3. Sauté onions and garlic in the same pot for 5 minutes until soft.
  4. Deglaze with a bit of broth, stir in tomato paste, and cook until darkened.
  5. Return beef to the pot. Add carrots, potatoes, thyme, bay leaves, and remaining broth. Season with salt and pepper.
  6. Bring to a boil, then simmer covered for 2.5 to 3 hours until beef is tender.
  7. Remove bay leaves and thyme. Stir in butter just before serving.
  8. Garnish with fresh herbs and serve hot.
