- 1 loaf brioche bread (about 14 oz), cut into cubes
- 8 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon vanilla extract
- 4 tablespoons unsalted butter, cut into small pieces
- Powdered sugar, for dusting
- Maple syrup, for serving
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, whisk together eggs, milk, cream, brown sugar, granulated sugar, cinnamon, nutmeg, and vanilla until fully combined.
- Spread the cubed brioche evenly in the prepared dish.
- Pour the custard mixture over the bread, gently pressing to ensure it soaks evenly. Dot the top with butter pieces.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Bake uncovered for 45–50 minutes or until golden brown and set in the center.
- Let rest for 5 minutes, dust with powdered sugar, and serve with warm maple syrup.
Notes
- Use day-old brioche or challah for best texture.
- Chill overnight to let flavors fully soak in.
- For added crunch, top with chopped nuts or streusel before baking.
- Reheat leftovers in the oven to preserve crispiness.
