- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1 cup canned black beans, drained
- 1 cup canned corn, drained
- 1 cup cherry tomatoes, halved
- 1 cup shredded iceberg lettuce
- 1 large avocado, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Stir in taco seasoning and a splash of water. Simmer until thickened, then remove from heat.
- Warm the cooked rice and prepare all toppings in separate bowls.
- To assemble, layer rice in each bowl, then top with seasoned beef, beans, corn, tomatoes, lettuce, avocado, cheese, and sour cream.
- Serve immediately, adding fresh herbs or lime juice if desired.
