Description

A vibrant and hearty bowl layered with seasoned ground beef, rice, fresh veggies, beans, and creamy toppings. A fun, customizable meal for any day of the week.


Ingredients

  • 2 cups cooked white rice
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup canned black beans, drained
  • 1 cup canned corn, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded iceberg lettuce
  • 1 large avocado, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Stir in taco seasoning and a splash of water. Simmer until thickened, then remove from heat.
  4. Warm the cooked rice and prepare all toppings in separate bowls.
  5. To assemble, layer rice in each bowl, then top with seasoned beef, beans, corn, tomatoes, lettuce, avocado, cheese, and sour cream.
  6. Serve immediately, adding fresh herbs or lime juice if desired.
