Ingredients
- Doritos, family-size bag, 12 oz, any flavor
- Mozzarella cheese sticks, 8 sticks, halved to make 16 pieces
- All-purpose flour, 1 cup
- Large eggs, 3, beaten
- Panko breadcrumbs, 1 cup
- Vegetable oil for frying, about 4 cups
- Garlic powder, 1 teaspoon, optional
- Paprika, 1/2 teaspoon, optional
- Crushed red chili flakes, 1/4 teaspoon, optional
- Marinara or ranch for dipping, 1 cup, optional
Instructions
- Heat oil in a deep pot to 350°F (175°C). Line a plate with paper towels for draining.
- Set up three bowls: flour in one, beaten eggs in the second, and panko (stir in optional seasonings) in the third.
- Halve the mozzarella sticks. Gently sandwich one piece of cheese between two Doritos, pressing to adhere.
- Coat each stuffed chip in flour, dip in egg, then in panko. Repeat egg and panko for a thicker seal.
- Transfer coated pieces to a tray and chill in the freezer for 10 minutes to help prevent leaks.
- Fry in small batches for 1 to 2 minutes per side until deep golden and crisp. Do not overcrowd.
- Drain briefly on paper towels. Sprinkle with a little crushed Doritos and serve hot with marinara or ranch.
Notes
- Make-ahead: Assemble and freeze uncooked pieces for up to 1 month. Fry from frozen, adding 1 to 2 minutes.
- Extra crunch: Double-coat in egg and panko to minimize cheese leakage.
- Air fryer: 375°F (190°C) for about 8 minutes, flipping halfway.
- Baked option: 400°F (205°C) for about 12 minutes, flipping once.
- Reheating: Use an oven or air fryer to keep them crisp. Avoid the microwave.
