Instructions

  4. Remove chicken from buttermilk, dredge in flour mixture (pressing firmly for a solid coat), and set aside. Toast buns with a bit of butter on a skillet.
  5. Fry chicken in batches until golden brown and cooked through, about 6–8 minutes per side. Drain on wire rack and keep warm in oven.
  6. Mix mayonnaise with chopped herbs to create the herby sauce. Spread on toasted buns, add fried chicken, spoon over cherry tomato confit, and top with greens.
