Description

Frozen lemon bars are the ultimate summertime dessert—zesty, creamy, and perfectly chilled with a buttery shortbread crust. These bars are a refreshing treat that’s easy to make and even easier to love.


Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. In a bowl, mix flour and powdered sugar. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press crust mixture into the pan and bake for 15 minutes or until lightly golden. Let cool completely.
  4. Whisk together sugar, eggs, lemon juice, zest, cream, vanilla, and salt until smooth.
  5. Pour filling over cooled crust and bake for 20 to 25 minutes until just set.
  6. Cool at room temperature, then freeze for at least 4 hours or overnight.
  7. Slice with a hot knife and serve straight from the freezer.
