Description

Ingredients

  • 1.5 pounds sirloin steak, cut into bite-sized pieces
  • 1.5 pounds baby potatoes, halved
  • 5 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat a large cast iron skillet over medium-high heat until hot.
  2. Toss halved baby potatoes with 1 tablespoon olive oil, smoked paprika, salt, and pepper.
  3. Place potatoes cut-side down in the skillet and sear for 6 to 8 minutes until golden and tender. Remove and set aside.
  4. Season beef cubes with salt and pepper.
  5. Add 1 tablespoon olive oil to the skillet. Place beef in a single layer, sear without stirring for 2 minutes, then cook for 3 to 4 more minutes until browned.
  6. Push beef to one side, add butter and minced garlic to the skillet, and stir for 1 minute until fragrant.
  7. Add cooked potatoes back to the skillet, toss everything together until coated in garlic butter.
  8. Sprinkle with fresh chopped parsley and serve hot.

Notes

  • Use a heavy-bottom skillet like cast iron for best sear results.
  • Parboil potatoes ahead of time to speed up cooking.
  • Don’t overcrowd the pan, cook in batches if needed.
