- 1.5 pounds sirloin steak, cut into bite-sized pieces
- 1.5 pounds baby potatoes, halved
- 5 cloves garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper, freshly ground
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large cast iron skillet over medium-high heat until hot.
- Toss halved baby potatoes with 1 tablespoon olive oil, smoked paprika, salt, and pepper.
- Place potatoes cut-side down in the skillet and sear for 6 to 8 minutes until golden and tender. Remove and set aside.
- Season beef cubes with salt and pepper.
- Add 1 tablespoon olive oil to the skillet. Place beef in a single layer, sear without stirring for 2 minutes, then cook for 3 to 4 more minutes until browned.
- Push beef to one side, add butter and minced garlic to the skillet, and stir for 1 minute until fragrant.
- Add cooked potatoes back to the skillet, toss everything together until coated in garlic butter.
- Sprinkle with fresh chopped parsley and serve hot.
Notes
- Use a heavy-bottom skillet like cast iron for best sear results.
- Parboil potatoes ahead of time to speed up cooking.
- Don’t overcrowd the pan, cook in batches if needed.
