Description
A comforting and flavorful dinner made with juicy garlic butter chicken, fluffy white rice, and tender steamed veggies. This dish is quick to make, family-friendly, and perfect for any night of the week.

- 1½ pounds chicken thighs, boneless and skinless
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- ½ cup chicken broth
- 1 cup uncooked white rice
- 2 cups fresh broccoli florets
- 2 medium carrots, sliced
- 1 teaspoon dried parsley
Instructions
- Heat a large skillet over medium-high heat and a medium pot for the rice. If using a steamer for veggies, set that up too.
- Season chicken thighs with salt and pepper. Rinse the rice if desired and get your garlic minced and veggies chopped.
- Add olive oil to the skillet. Once hot, place chicken thighs in and sear each side until golden, about 3–4 minutes per side.
- While the chicken cooks, start your rice in the pot with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 18 minutes.
- Once chicken is golden, reduce heat. Add butter and minced garlic. Stir as butter melts, then add chicken broth. Let simmer for 5–7 minutes until chicken is fully cooked and the sauce thickens.
- Steam your broccoli and carrots until just tender, about 4–5 minutes. Toss the dried parsley into the garlic butter sauce for a herby touch.
- Plate the rice first, top with garlic butter chicken, spoon some of the sauce over everything, and serve with a generous helping of veggies on the side.
