- 12 ounces dried spaghetti
- 4 cups fresh spinach leaves, loosely packed
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 cup freshly grated parmesan cheese
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
Instructions
- Bring a large pot of salted water to a rolling boil over high heat.
- Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium low heat, add olive oil and butter. Once melted, stir in the minced garlic and cook for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted.
- Add the drained pasta to the skillet and toss with the spinach and garlic butter.
- Add a splash of reserved pasta water and stir in the grated parmesan, salt, and black pepper. Toss until evenly coated and silky.
- Taste and adjust seasoning as needed, then serve warm with extra parmesan if desired.
Notes
- Use freshly grated parmesan for the best flavor and melt.
- Do not brown the garlic, keep the heat moderate to avoid bitterness.
- Add reserved pasta water gradually to control sauce consistency.
- Serve immediately for the best texture and flavor.
