Description

A quick and comforting pasta dish made with spaghetti tossed in a silky garlic butter sauce, fresh spinach, and grated parmesan. Simple ingredients come together in just 20 minutes for a flavorful and satisfying vegetarian meal.


Ingredients

  • 12 ounces dried spaghetti
  • 4 cups fresh spinach leaves, loosely packed
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 cup freshly grated parmesan cheese
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Bring a large pot of salted water to a rolling boil over high heat.
  2. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  3. In a large skillet over medium low heat, add olive oil and butter. Once melted, stir in the minced garlic and cook for about 1 minute until fragrant.
  4. Add the fresh spinach to the skillet and cook until wilted.
  5. Add the drained pasta to the skillet and toss with the spinach and garlic butter.
  6. Add a splash of reserved pasta water and stir in the grated parmesan, salt, and black pepper. Toss until evenly coated and silky.
  7. Taste and adjust seasoning as needed, then serve warm with extra parmesan if desired.

Notes

  • Use freshly grated parmesan for the best flavor and melt.
  • Do not brown the garlic, keep the heat moderate to avoid bitterness.
  • Add reserved pasta water gradually to control sauce consistency.
  • Serve immediately for the best texture and flavor.
