Description

Tender salmon fillets pan-seared in garlic butter, then simmered with spinach and mushrooms in a rich, creamy sauce. A quick yet elegant low-carb dinner packed with flavor.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add salmon, skin side down, and sear for 4-5 minutes per side, until golden and cooked through. Remove and set aside.
  3. Reduce heat to medium and add butter to the same skillet. Once melted, add garlic and sauté for 30 seconds.
  4. Add mushrooms and cook for 4-5 minutes until softened.
  5. Stir in spinach and cook until wilted, about 2 minutes.
  6. Pour in heavy cream, Parmesan, and red pepper flakes (if using). Simmer for 3-4 minutes until the sauce thickens slightly.
  7. Return salmon to the skillet and spoon the creamy mixture over the fillets. Let simmer for 2 more minutes to heat through.
  8. Garnish with fresh parsley and serve hot.

Notes

  • Use skinless salmon if preferred.
  • For a lighter version, substitute half-and-half for heavy cream.
  • Pairs well with cauliflower rice or mashed potatoes.
