- 12 oz fettuccine pasta
- 1 lb boneless skinless chicken thighs
- 6 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup freshly grated parmesan cheese
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil and cook fettuccine until al dente. Reserve 1/2 cup pasta water, then drain.
- Season chicken with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear chicken 4–5 minutes per side until golden and cooked through. Remove and let rest.
- Lower heat to medium. In the same skillet, add butter and garlic. Sauté for about 1 minute until fragrant.
- Add heavy cream and bring to a gentle simmer. Stir in parmesan until melted and smooth.
- Slice chicken into strips. Return chicken and pasta to the pan and toss everything to coat. Add pasta water as needed to loosen the sauce.
- Sprinkle with chopped parsley, adjust seasoning if needed, and serve hot with extra parmesan on top.
