Description

Tender chicken, earthy mushrooms, and a luscious garlic-parmesan cream sauce come together with perfectly cooked spaghetti for a comforting, indulgent pasta dish you’ll want to make again and again.


Ingredients

  • 2 medium boneless skinless chicken breasts, cut into strips
  • 12 ounces spaghetti
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 large garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 1 1/2 cups heavy cream
  • 1 cup parmesan cheese, freshly grated
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place a large pot of salted water on the stove for pasta and a large skillet over medium-high heat for the chicken.
  2. Season chicken with salt and pepper. Heat olive oil in the skillet and sear chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter, add garlic, and sauté until fragrant. Add mushrooms and cook until tender.
  4. Pour in chicken broth, scraping up any browned bits, then stir in heavy cream. Let simmer gently.
  5. Add parmesan and stir until smooth. Adjust seasoning with salt and pepper.
  6. Cook spaghetti in boiling water until al dente, then transfer to the sauce along with chicken. Toss to coat evenly.
  7. Sprinkle with fresh parsley and serve immediately while warm and creamy.

Notes

  • Use freshly grated parmesan for the creamiest sauce.
  • Reserve pasta water to thin the sauce if needed.
  • Let chicken rest before slicing to retain juices.
