- 2 medium boneless skinless chicken breasts, cut into strips
- 12 ounces spaghetti
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 large garlic cloves, minced
- 8 ounces mushrooms, sliced
- 1 1/2 cups heavy cream
- 1 cup parmesan cheese, freshly grated
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Place a large pot of salted water on the stove for pasta and a large skillet over medium-high heat for the chicken.
- Season chicken with salt and pepper. Heat olive oil in the skillet and sear chicken until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter, add garlic, and sauté until fragrant. Add mushrooms and cook until tender.
- Pour in chicken broth, scraping up any browned bits, then stir in heavy cream. Let simmer gently.
- Add parmesan and stir until smooth. Adjust seasoning with salt and pepper.
- Cook spaghetti in boiling water until al dente, then transfer to the sauce along with chicken. Toss to coat evenly.
- Sprinkle with fresh parsley and serve immediately while warm and creamy.
Notes
- Use freshly grated parmesan for the creamiest sauce.
- Reserve pasta water to thin the sauce if needed.
- Let chicken rest before slicing to retain juices.
