Instructions
- Pat lamb chops dry with paper towels. Season both sides with salt, pepper, garlic powder, and oregano.
- In one shallow bowl, beat the eggs. In another, mix breadcrumbs, Parmesan cheese, minced garlic, and parsley.
- Dip each lamb chop in the egg mixture, then coat thoroughly in the breadcrumb mixture, pressing gently to adhere.
- Heat vegetable oil in a skillet over medium heat until shimmering.
- Fry lamb chops in batches for about 3-4 minutes per side or until golden brown and cooked to desired doneness.
- Transfer to a paper towel-lined plate to drain excess oil. Let rest for a few minutes.
- Serve hot with lemon wedges if desired.
Notes
- For extra crispiness, chill the breaded chops for 15 minutes before frying.
- Use a meat thermometer: 135°F for medium-rare, 145°F for medium.
