  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 2 eggs, beaten
  • 1 cup breadcrumbs (Panko preferred for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup vegetable oil (for frying)
  • Lemon wedges, for serving (optional)

Instructions

  1. Pat lamb chops dry with paper towels. Season both sides with salt, pepper, garlic powder, and oregano.
  2. In one shallow bowl, beat the eggs. In another, mix breadcrumbs, Parmesan cheese, minced garlic, and parsley.
  3. Dip each lamb chop in the egg mixture, then coat thoroughly in the breadcrumb mixture, pressing gently to adhere.
  4. Heat vegetable oil in a skillet over medium heat until shimmering.
  5. Fry lamb chops in batches for about 3-4 minutes per side or until golden brown and cooked to desired doneness.
  6. Transfer to a paper towel-lined plate to drain excess oil. Let rest for a few minutes.
  7. Serve hot with lemon wedges if desired.

Notes

  • For extra crispiness, chill the breaded chops for 15 minutes before frying.
  • Use a meat thermometer: 135°F for medium-rare, 145°F for medium.
