- 2 lbs (900g) baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs (or a mix of thyme, oregano, and rosemary)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, pepper, and Italian herbs.
- Spread the potatoes cut-side down on a baking sheet lined with parchment paper or lightly greased.
- Roast for 25–30 minutes or until golden and crispy.
- Remove from oven and sprinkle with grated Parmesan cheese while still hot. Toss gently to coat.
- Garnish with chopped parsley if desired, and serve warm.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes and pat dry before roasting.
- You can substitute Parmesan with Pecorino Romano for a sharper flavor.
- Add a pinch of red pepper flakes for a bit of heat.
- Use Yukon Gold or red potatoes for best texture and flavor.
