Description

These crispy Garlic Parmesan Potatoes are roasted to perfection with a savory blend of garlic, herbs, and freshly grated Parmesan. A perfect side dish for any meal.


Ingredients

  • 2 lbs (900g) baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs (or a mix of thyme, oregano, and rosemary)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, pepper, and Italian herbs.
  3. Spread the potatoes cut-side down on a baking sheet lined with parchment paper or lightly greased.
  4. Roast for 25–30 minutes or until golden and crispy.
  5. Remove from oven and sprinkle with grated Parmesan cheese while still hot. Toss gently to coat.
  6. Garnish with chopped parsley if desired, and serve warm.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes and pat dry before roasting.
  • You can substitute Parmesan with Pecorino Romano for a sharper flavor.
  • Add a pinch of red pepper flakes for a bit of heat.
  • Use Yukon Gold or red potatoes for best texture and flavor.
