- 1½ pounds boneless chicken thighs, cut into chunks
- 4 medium yellow potatoes, thinly sliced
- 6 garlic cloves, minced
- 1 cup heavy cream
- ¾ cup chicken broth
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a casserole dish or individual ramekins.
- In a large skillet, heat olive oil over medium heat. Sear the chicken chunks until golden, about 4–5 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute. Stir in heavy cream, chicken broth, salt, and pepper. Simmer for 3–4 minutes until slightly thickened.
- Place the seared chicken in the baking dish and pour the garlic cream sauce over it.
- Layer thin potato slices over the chicken and sauce, overlapping slightly. Season lightly with salt and pepper if desired.
- Cover with foil and bake for 30 minutes. Remove foil and bake another 20–25 minutes until potatoes are golden and tender.
- Let rest for 5 minutes, then garnish with chopped parsley and serve warm.

- Use Yukon Gold potatoes for best texture and flavor.
- Mandoline slicer helps achieve even potato slices.
- Add parmesan over potatoes before baking for a cheesy crust.
