Description

Golden, garlicky salmon fillets paired with sweet green peas and a lemony butter sauce. A quick and elegant dinner that comes together in under 30 minutes.


Ingredients

Scale
  • 4 salmon fillets (about 6 oz each)
  • 4 garlic cloves, minced
  • 1 ½ cups green peas (fresh or frozen)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced
  • ¾ teaspoon salt (or to taste)
  • ½ teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.
  2. Season salmon fillets with salt and pepper. Place them skin-side down into the skillet and cook for 4–5 minutes until golden.
  3. Flip the salmon carefully and reduce heat to medium. Add garlic and remaining butter to the pan.
  4. Spoon the garlicky butter over the salmon while cooking.
  5. Add peas into the skillet, stirring gently. Cook for 3 minutes until tender.
  6. Remove from heat and squeeze lemon juice over the dish.
  7. Sprinkle with lemon zest and chopped parsley. Let salmon rest for 2 minutes before serving.

Notes

  • Pat salmon dry for the perfect sear.
  • Don’t let garlic brown too much or it may taste bitter.
  • Add lemon zest at the end for a fresh finish.
