Ingredients
Scale
- 4 salmon fillets (about 6 oz each)
- 4 garlic cloves, minced
- 1 ½ cups green peas (fresh or frozen)
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 lemon, zested and juiced
- ¾ teaspoon salt (or to taste)
- ½ teaspoon black pepper, freshly ground
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.
- Season salmon fillets with salt and pepper. Place them skin-side down into the skillet and cook for 4–5 minutes until golden.
- Flip the salmon carefully and reduce heat to medium. Add garlic and remaining butter to the pan.
- Spoon the garlicky butter over the salmon while cooking.
- Add peas into the skillet, stirring gently. Cook for 3 minutes until tender.
- Remove from heat and squeeze lemon juice over the dish.
- Sprinkle with lemon zest and chopped parsley. Let salmon rest for 2 minutes before serving.
Notes
- Pat salmon dry for the perfect sear.
- Don’t let garlic brown too much or it may taste bitter.
- Add lemon zest at the end for a fresh finish.
