Description

A quick and flavorful gluten-free chicken lo mein made with tender chicken, rice noodles, and vibrant vegetables tossed in a savory sauce.


Ingredients

  • 2 cups chicken breast, thinly sliced
  • 8 oz rice noodles, dry
  • 1 cup bell peppers, sliced
  • 1 cup carrots, shredded
  • 1/2 cup green onions, chopped
  • 1/4 cup gluten-free soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. In a small bowl, mix gluten-free soy sauce, sesame oil, chicken broth, and cornstarch until smooth.
  3. Add a bit of oil to the skillet and let it heat.
  4. Add sliced chicken and cook until lightly browned, then remove and set aside.
  5. In the same pan, sauté garlic and ginger, then add bell peppers and carrots and cook until slightly tender.
  6. Cook rice noodles according to package instructions, then drain.
  7. Add cooked noodles and chicken back to the pan.
  8. Pour in the sauce and toss everything together until well coated and heated through.
  9. Add green onions and toss again.
  10. Serve hot and enjoy.

  • Do not overcook the noodles to avoid mushy texture.
  • Prep all ingredients before cooking for a smoother process.
