- 1 cup almond flour
- 1 teaspoon baking soda

- 1/2 teaspoon ground cinnamon
- 3/4 cup brown sugar (packed)
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter (softened)
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together rolled oats, almond flour, baking soda, salt, and cinnamon.
- In a large bowl, beat the softened butter with both sugars until light and fluffy. Add eggs and vanilla extract, then mix until well combined.
- Gradually add the dry ingredients into the wet mixture and stir until just combined. Fold in the chocolate chips.
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing each about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are golden and centers look set.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Chill the dough for thicker, chewier cookies.
