Description

Fluffy, golden gluten-free pancakes that are just as comforting and delicious as the classic version. Perfect for breakfast or brunch with your favorite toppings.


Ingredients

  • 1 cup gluten-free flour blend
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted (plus more for the pan)

Instructions

  1. Preheat a nonstick skillet or griddle over medium heat.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs, then whisk in milk, maple syrup, vanilla extract, and melted butter.
  4. Pour the wet ingredients into the dry and stir until just combined. Let the batter rest for 5 minutes.
  5. Lightly grease the skillet with butter or oil.
  6. Scoop 1/4 cup of batter for each pancake onto the skillet, spacing them evenly.
  7. Cook for 2–3 minutes until bubbles form and edges look set. Flip and cook another 1–2 minutes until golden.
  8. Serve warm with your favorite toppings.

Notes

  • Let the batter rest before cooking for fluffier pancakes.
  • Use medium heat to avoid burning the outside before the inside is cooked.
  • Store leftovers in the fridge or freezer and reheat in a toaster.
