- 1 1/2 cups gluten-free all-purpose flour blend
- 1/2 cup coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened almond milk (or other plant milk)
- 1/4 cup unsweetened applesauce
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- For the caramel glaze:
1/2 cup coconut cream
1/4 cup coconut sugar
1 tablespoon maple syrup
1 teaspoon vanilla extract
Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and grease a doughnut pan.
- In a large bowl, whisk together gluten-free flour, coconut sugar, baking powder, baking soda, and salt.
- In another bowl, combine almond milk, applesauce, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Spoon the batter evenly into the doughnut pan cavities.
- Bake for 15–18 minutes or until a toothpick inserted comes out clean.
- Allow doughnuts to cool completely on a wire rack before glazing.
- To make the caramel glaze, heat coconut cream, coconut sugar, maple syrup, vanilla, and salt in a small saucepan over medium heat. Stir continuously until it thickens slightly, about 5–7 minutes. Let cool slightly.
- Dip the tops of the cooled doughnuts into the caramel glaze and place back on the rack to set.
Notes
- Make sure to use a gluten-free flour blend with xanthan gum for best texture.
- Store doughnuts in an airtight container in the fridge and consume within 3 days.
- For a vegan option, ensure all ingredients including sugar and chocolate are vegan certified.
