Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup ricotta cheese
- 1/4 cup milk
- 1 teaspoon almond extract
- 1/4 cup sliced almonds (for garnish)
- 1 egg, beaten (for egg wash)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add ricotta, milk, and almond extract. Stir just until the dough comes together—do not overmix.
- Turn the dough onto a floured surface, knead gently a few times, and roll out into a rectangle about 1/2 inch thick.
- Cut the dough into strips about 1 inch wide and 4 inches long. Twist each strip and place on the prepared baking sheet.
- Brush with beaten egg and sprinkle with sliced almonds.
- Bake for 15–18 minutes, or until golden brown.
- Cool slightly, then dust with powdered sugar if desired. Serve warm or at room temperature.
Notes
- Use full-fat ricotta for the richest flavor and texture.
- Twists can be stored in an airtight container for up to 3 days.
- Add a teaspoon of lemon zest to the dough for a bright citrus note.
