Description

  • 1 ½ pounds boneless skinless chicken thighs
  • 1 cup plain Greek yogurt
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 small cucumber, diced
  • 1 large tomato, diced
  • ½ small red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 4 large rounds pita bread

Instructions

  1. Heat your grill pan or skillet over medium-high heat.
  2. In a mixing bowl, combine chicken thighs with olive oil, lemon juice, oregano, salt, and pepper. Let it marinate for at least 30 minutes.
  3. Lightly oil your grill pan or skillet and place over medium-high heat.
  4. In a small bowl, mix Greek yogurt, minced garlic, lemon juice, and a pinch of salt to create the garlic yogurt sauce.
  5. Prepare vegetables by dicing cucumber and tomato, slicing red onion, and chopping parsley.
  6. Grill chicken for 5–7 minutes per side until cooked through. Let rest, then slice into strips.
  7. Warm pita bread to soften. Assemble wraps with veggies, sliced chicken, and garlic yogurt sauce.
  8. Roll up, serve immediately, and enjoy.
