- 1 cup plain Greek yogurt

- 3 tablespoons olive oil

- ½ teaspoon black pepper
- 1 small cucumber, diced
- 1 large tomato, diced
- ½ small red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- 4 large rounds pita bread
Instructions
- Heat your grill pan or skillet over medium-high heat.
- In a mixing bowl, combine chicken thighs with olive oil, lemon juice, oregano, salt, and pepper. Let it marinate for at least 30 minutes.
- Lightly oil your grill pan or skillet and place over medium-high heat.
- In a small bowl, mix Greek yogurt, minced garlic, lemon juice, and a pinch of salt to create the garlic yogurt sauce.
- Prepare vegetables by dicing cucumber and tomato, slicing red onion, and chopping parsley.
- Grill chicken for 5–7 minutes per side until cooked through. Let rest, then slice into strips.
- Warm pita bread to soften. Assemble wraps with veggies, sliced chicken, and garlic yogurt sauce.
- Roll up, serve immediately, and enjoy.
