Description

Delicious and bite-sized Greek salad served on warm naan with a generous spread of hummus. A perfect appetizer or light meal with Mediterranean flavors and fresh ingredients.


Ingredients

  • 4 small naan breads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/2 cup hummus (store-bought or homemade)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 350°F (175°C) or heat naan in a dry skillet for 1-2 minutes until warm and soft.
  2. In a bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, feta, olive oil, lemon juice, oregano, salt, and pepper. Toss gently to combine.
  3. Spread a layer of hummus on each piece of warm naan bread.
  4. Top with the Greek salad mixture, spreading evenly across the naan.
  5. Garnish with fresh parsley and serve immediately, either warm or at room temperature.

Notes

  • For extra flavor, drizzle with a little balsamic glaze or tzatziki sauce.
  • To make it vegan, omit the feta cheese or use a dairy-free alternative.
  • These bites can be served as an appetizer, snack, or light lunch.
