- 4 small naan breads
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup hummus (store-bought or homemade)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 350°F (175°C) or heat naan in a dry skillet for 1-2 minutes until warm and soft.
- In a bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, feta, olive oil, lemon juice, oregano, salt, and pepper. Toss gently to combine.
- Spread a layer of hummus on each piece of warm naan bread.
- Top with the Greek salad mixture, spreading evenly across the naan.
- Garnish with fresh parsley and serve immediately, either warm or at room temperature.
Notes
- For extra flavor, drizzle with a little balsamic glaze or tzatziki sauce.
- To make it vegan, omit the feta cheese or use a dairy-free alternative.
- These bites can be served as an appetizer, snack, or light lunch.
