Description

A crispy, cheesy twist on a classic burrito packed with seasoned beef, rice, sauces, and a golden cheese crust that tastes just like the fast-food favorite — but even better at home.


Ingredients

  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1/3 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 2 tablespoons butter

Instructions

  1. Heat a large skillet over medium heat and cook the ground beef with taco seasoning until fully browned. Set aside.
  2. In a bowl, mix cooked rice with nacho cheese sauce and chipotle sauce. Add the cooked beef and stir to combine.
  3. Wipe out the skillet and return to medium heat. Add a small amount of butter to coat the bottom.
  4. Lay out a tortilla, spread with sour cream, then spoon the beef and rice mixture in the center. Top with a small handful of shredded cheddar and mozzarella cheese.
  5. Roll into a burrito, folding in the sides tightly.
  6. In the skillet, sprinkle a small handful of shredded cheese directly onto the pan, then press the burrito seam-side down onto the cheese.
  7. Cook until the cheese on the outside is golden and crisp, then flip to warm the other side.
  8. Remove from skillet, let rest for 1 minute, then serve hot.

Notes

  • Use freshly shredded cheese for the best melt and crust.
  • Don’t overfill the burrito or it may tear during grilling.
  • Let the filling cool slightly before wrapping to avoid soggy tortillas.
  • Make the beef and rice mix ahead to save time.
