A comforting yet elegant pasta dish featuring smoky grilled chicken, tender fettuccine, crisp fresh broccoli, and a rich homemade Alfredo sauce. Perfect for weeknight dinners or special gatherings.
Ingredients
- Fettuccine Pasta: 12 ounces
- Boneless Skinless Chicken Breasts: 2 medium
- Fresh Broccoli Florets: 3 cups
- Unsalted Butter: 4 tablespoons
- Heavy Cream: 1 ½ cups
- Freshly Grated Parmesan Cheese: 1 cup
- Olive Oil: 2 tablespoons
- Garlic Cloves (minced): 2
- Salt: 1 teaspoon
- Black Pepper: ½ teaspoon
- Pasta Cooking Water: ½ cup
Instructions
- Preheat grill or grill pan to medium-high heat.
- Brush chicken with olive oil, season with salt and pepper.
- Bring a large pot of salted water to a boil for pasta and broccoli.
- Grill chicken 5–6 minutes per side until cooked through, then rest.
- Cook pasta according to package directions. Add broccoli to boiling pasta water during the last 2 minutes.
- In a skillet, melt butter, sauté garlic, add cream, and simmer 3–4 minutes. Stir in Parmesan until smooth.
- Drain pasta and broccoli, reserving some cooking water. Toss in sauce, adding water if needed.
- Slice chicken and arrange on top of pasta. Garnish with extra Parmesan and pepper.
Notes
- Use freshly grated Parmesan for the best texture.
- Blanch broccoli only until bright green for maximum crunch.
- Reserve pasta water to adjust sauce consistency.
