- 2 lbs chicken wings, split and tips removed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup peperoncini, finely chopped
- 2 tablespoons peperoncini brine
- 1 tablespoon chopped parsley (optional)
Instructions
- Preheat grill to medium-high heat (around 400°F / 200°C).
- In a large bowl, toss chicken wings with olive oil, salt, pepper, and smoked paprika.
- Grill wings for 20–25 minutes, turning occasionally, until golden brown and cooked through (internal temp 165°F / 74°C).
- While wings cook, melt butter in a small saucepan over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
- Stir in chopped peperoncini and brine. Cook for another minute, then remove from heat.
- Transfer grilled wings to a large bowl. Pour peperoncini garlic butter over and toss to coat evenly.
- Garnish with chopped parsley and serve immediately.
Notes
- For crispier skin, grill wings over direct heat at the end for 2–3 minutes.
- Peperoncini brine adds tang—adjust quantity to taste.
- Serve with ranch or blue cheese dip if desired.
