Description

Golden and crisp on the outside, soft and custardy on the inside, this Grilled French Toast is a cozy breakfast classic made with brioche, warm cinnamon, and a drizzle of maple syrup. Perfect for slow mornings or weekend brunch.

  • 8 thick slices brioche bread, slightly stale
  • 4 large eggs
  • 1 cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons unsalted butter
  • 1/4 cup maple syrup, for serving
  • 1 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat a nonstick skillet or grill pan over medium heat.
  2. In a large mixing bowl, whisk together eggs, whole milk, granulated sugar, ground cinnamon, and vanilla extract until smooth and fully combined.
  3. Add a portion of the unsalted butter to the skillet and allow it to melt, coating the surface evenly.
  4. Dip each slice of brioche bread into the custard mixture, soaking for 20 to 30 seconds per side.
  5. Place the soaked bread onto the skillet and cook for 3 to 4 minutes per side, until golden brown and slightly crisp.
  6. Repeat with remaining slices, adding more butter as needed.
  7. Serve warm with maple syrup, fresh strawberries, and fresh blueberries.

Notes

  • Use slightly stale bread for best texture and structure.
  • Cook over medium heat to avoid burning the outside before the inside sets.
  • Keep cooked slices warm in a low oven while preparing the remaining batches.
