Description

Smoky, garlicky prawns kissed by the grill and glossed with lemony parsley butter. Quick to make, vibrant to serve, and absolutely irresistible.

Ingredients

Scale
  • 1 lb large prawns, shell-on and deveined
  • 4 tbsp unsalted butter, melted
  • 2 tbsp extra-virgin olive oil
  • 4 cloves garlic, minced
  • 3 tbsp fresh parsley, finely chopped, plus extra for garnish
  • 1 lemon, juiced, plus wedges for serving
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. Preheat Your Equipment: Heat a grill or grill pan to medium high and lightly oil the grates.
  2. Combine Ingredients: In a bowl whisk melted butter, olive oil, minced garlic, chopped parsley, lemon juice, salt, and pepper.
  3. Prepare Your Cooking Vessel: Thread prawns onto soaked wooden or metal skewers to keep them flat and easy to flip.
  4. Assemble the Dish: Toss prawns in the garlic parsley butter until evenly coated.
  5. Cook to Perfection: Grill prawns 2 to 3 minutes per side until pink, opaque, and lightly charred.
  6. Finishing Touches: Brush with a little extra garlic butter and shower with fresh parsley.
  7. Serve and Enjoy: Transfer to a warm platter and serve immediately with lemon wedges.

Notes

  • Marinate prawns for 15 to 30 minutes for best flavor, avoid longer to prevent a mushy texture.
  • Oil the grill grates well to prevent sticking and tearing.
  • If using wooden skewers, soak them in water for 20 minutes before grilling.
  • Season lightly, prawns are naturally briny so taste before adding more salt.
