Description

Ingredients

  • Chicken Thighs: 2 pounds, boneless and skinless
  • Olive Oil: 3 tablespoons
  • Garlic Powder: 1 teaspoon
  • Smoked Paprika: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Hot Honey: 1/2 cup
  • Fresh Corn: 4 ears, grilled and kernels cut off
  • Cherry Tomatoes: 1 1/2 cups, halved
  • Red Onion: 1/2 small, finely diced
  • Cilantro: 1/4 cup, chopped
  • Lime Juice: 2 tablespoons, fresh
  • Feta Cheese: 1/2 cup, crumbled

Instructions

  1. Preheat Your Equipment: Heat your grill to medium-high heat or preheat a heavy grill pan over medium-high on the stove.
  2. Combine Ingredients: In a bowl, whisk together olive oil, garlic powder, smoked paprika, salt, and black pepper. Add chicken thighs and coat evenly. Let rest at least 30 minutes if time allows.
  3. Prepare Your Cooking Vessel: Lightly oil the grill grates or the grill pan to prevent sticking and ensure even searing.
  4. Assemble the Dish: Place the seasoned chicken on the hot grill. At the same time place corn directly on the grates to char, turning occasionally until evenly blistered.
  5. Cook to Perfection: Grill chicken about 6 to 7 minutes per side until an internal temperature of 165°F is reached and grill marks appear. Grill corn until slightly charred on all sides. Remove corn from heat and cut kernels off the cob.
  6. Finishing Touches: In a bowl combine grilled corn kernels, cherry tomatoes, diced red onion, chopped cilantro, lime juice, and crumbled feta. Warm the hot honey slightly and brush it onto the chicken during the last 1 to 2 minutes of grilling so it becomes glossy without burning.
