Description

Grilled Hot Honey Chicken with Sweet Corn Salad is a flavorful, summer-perfect dish. Juicy grilled chicken is coated in a sweet and spicy hot honey glaze and served with a refreshing salad made of fresh corn, cherry tomatoes, avocado, and herbs.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • For the Hot Honey Glaze:
  • 1/3 cup honey
  • 12 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • For the Sweet Corn Salad:
  • 2 cups fresh corn kernels (from about 3 ears or use thawed frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan to medium-high heat. Rub chicken with olive oil, paprika, garlic powder, salt, and pepper.
  2. Grill chicken for 5–7 minutes per side, or until fully cooked and nicely charred. Remove from heat and let rest.
  3. Meanwhile, in a small saucepan over low heat, combine honey, hot sauce, and apple cider vinegar. Simmer gently for 2–3 minutes, then set aside.
  4. Brush grilled chicken with the hot honey glaze while still warm.
  5. For the corn salad: In a large bowl, combine corn, cherry tomatoes, avocado, red onion, lime juice, and cilantro. Season with salt and pepper and toss gently.
  6. Serve the glazed chicken alongside the fresh corn salad. Optionally, drizzle extra hot honey over the top.

Notes

  • Use pre-cooked or grilled corn for extra smoky flavor in the salad.
  • Make it spicier by adding chopped jalapeños to the salad.
  • Chicken thighs tend to stay juicier than breasts when grilled.
