- 4 salmon fillets (6 oz each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 1 large avocado, sliced
- 1 cup fresh cilantro, packed
- 1/4 cup lime juice (about 2 limes)
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 clove garlic
- 1 tablespoon honey
Instructions
- Preheat grill or grill pan over medium-high heat.
- Season salmon fillets with olive oil, salt, and pepper.
- Grill salmon for 3–4 minutes per side until just cooked through. Let rest.
- Blend cilantro, lime juice, Greek yogurt, mayonnaise, garlic, honey, and a pinch of salt until smooth.
- Arrange mixed salad greens in bowls. Add tomatoes, cucumber, red onion, and avocado.
- Top salad with grilled salmon fillets.
- Drizzle with creamy cilantro lime dressing and serve immediately.
Notes
- Chill the dressing for 10 minutes before serving for enhanced flavor.
- Use skin-on salmon for extra crisp texture.
