- 2 large chicken breasts
- 1/2 cup fresh spinach, chopped
- 1/4 cup cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter
- 1/4 teaspoon nutmeg (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat grill to medium heat. Slice a pocket into each chicken breast without cutting all the way through.
- In a bowl, mix spinach, cream cheese, mozzarella, and garlic. Season with salt and pepper.
- Stuff each chicken breast with the mixture and secure with toothpicks if necessary.
- Brush the chicken with olive oil and season the outside with salt and pepper.
- Grill the chicken for about 6-7 minutes per side, or until cooked through and golden.
- Meanwhile, in a saucepan over medium heat, melt butter and add heavy cream. Stir in Parmesan cheese and nutmeg. Cook until thickened, about 5 minutes.
- Serve the grilled chicken topped with cream sauce and garnish with fresh parsley.
Notes
- You can add sun-dried tomatoes or mushrooms to the stuffing for extra flavor.
- Use a meat thermometer to ensure the chicken reaches 165°F (74°C).
- This dish pairs well with mashed potatoes or sautéed green beans.
