Description

Grinder Chicken Salad is a fresh and hearty salad featuring tender grilled chicken, crisp veggies, and creamy dressing, offering a satisfying meal that’s both nutritious and flavorful.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 cups mixed greens (such as spinach, arugula, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup roasted almonds, chopped
  • Grinder Dressing:
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush chicken breasts with olive oil and season with salt and pepper.
  2. Grill chicken for 5-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Let rest, then slice thinly.
  3. In a large bowl, toss together mixed greens, cherry tomatoes, cucumber, red onion, shredded carrots, feta cheese, and roasted almonds.
  4. In a small bowl, whisk together mayonnaise, Dijon mustard, honey, apple cider vinegar, garlic powder, salt, and pepper to make the grinder dressing.
  5. Drizzle dressing over the salad and toss to combine.
  6. Top with sliced chicken and serve immediately.
