- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup feta cheese, crumbled
- 1/4 cup roasted almonds, chopped
- Grinder Dressing:
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Preheat grill or grill pan to medium-high heat. Brush chicken breasts with olive oil and season with salt and pepper.
- Grill chicken for 5-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Let rest, then slice thinly.
- In a large bowl, toss together mixed greens, cherry tomatoes, cucumber, red onion, shredded carrots, feta cheese, and roasted almonds.
- In a small bowl, whisk together mayonnaise, Dijon mustard, honey, apple cider vinegar, garlic powder, salt, and pepper to make the grinder dressing.
- Drizzle dressing over the salad and toss to combine.
- Top with sliced chicken and serve immediately.
