Description

Tender halibut fillets baked with lemon garlic butter, served alongside roasted baby potatoes and fresh asparagus, all ready in just 30 minutes.


Ingredients

  • 2 halibut fillets, about 6 ounces each
  • 1 bunch asparagus, about 12 ounces, trimmed
  • 1 pound baby potatoes, halved
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 whole fresh lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a small saucepan over low heat, melt the butter. Add minced garlic and cook for about 1 minute until fragrant. Stir in lemon juice and zest, then set aside.
  3. Toss halved baby potatoes with 1 tablespoon olive oil, half the salt, and half the black pepper. Spread on one side of the baking sheet and roast for 10 minutes.
  4. Remove pan from oven. Toss asparagus with remaining olive oil, salt, and pepper, then add to the sheet. Place halibut fillets on the sheet and spoon lemon garlic butter over the top.
  5. Return to oven and bake for 10 to 12 minutes, until halibut flakes easily with a fork and potatoes are tender.
  6. Spoon extra pan sauce over the fish before serving and serve immediately.

Notes

  • Pat the halibut dry before baking to help it roast properly.
  • Do not overcook the fish, check for doneness early to keep it moist.
  • Cut potatoes evenly so they cook at the same rate.
  • Fresh lemon juice gives the best flavor.
