A festive and creamy Halloween sugar cookie cheesecake topped with vibrant sugar cookies for a perfect holiday treat.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 1/2 teaspoons vanilla extract
- 3 large eggs, room temperature
- 10 to 12 Halloween sugar cookies, crushed or halved
Instructions
- Preheat your oven to 325°F. Wrap the outside of a springform pan with aluminum foil.
- In a bowl, mix graham cracker crumbs and melted butter. Press firmly into the bottom of the springform pan to form the crust.
- Place the springform pan into a larger baking pan. Boil water for the water bath.
- In a large bowl, beat the cream cheese until smooth. Add sugar, sour cream, and vanilla extract, then mix until combined. Add eggs one at a time, beating on low speed. Fold in crushed cookies.
- Pour the filling over the crust. Place the springform pan into the larger pan and pour hot water around it to create a water bath.
- Bake for 55–65 minutes until the center is nearly set. Turn off the oven and let the cheesecake rest inside for 1 hour.
- Cool completely, then refrigerate overnight. Decorate with remaining sugar cookies just before serving.
- Slice with a warm knife and enjoy.
