Description

Juicy chicken thighs, sweet pineapple, and colorful bell peppers roast together on one pan in a glossy honey soy glaze for an easy tropical-inspired dinner.

  • 1.5 pounds boneless skinless chicken thighs
  • 2 cups fresh pineapple chunks
  • 1 large red bell pepper, chopped
  • 1 large green bell pepper, chopped
  • 1 medium yellow onion, sliced
  • 3 garlic cloves, minced
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sesame seeds
  • 2 tablespoons green onions, sliced

Instructions

  1. Preheat the oven to 400°F and lightly oil a large sheet pan.
  2. In a mixing bowl, whisk together the soy sauce, honey, olive oil, cornstarch, minced garlic, salt, and black pepper until smooth.
  3. Arrange the chicken thighs on the sheet pan, leaving a little space between each piece.
  4. Add the pineapple chunks, chopped red bell pepper, chopped green bell pepper, and sliced onion around the chicken.
  5. Pour the sauce over the chicken and vegetables, then gently toss the vegetables so they are lightly coated.
  6. Bake for 25 minutes, or until the chicken is cooked through and the vegetables are tender with lightly caramelized edges.
  7. Sprinkle with sesame seeds and sliced green onions before serving.
  8. Serve hot with rice or noodles, spooning any extra glaze from the pan over each portion.

Notes

  • Fresh pineapple gives the brightest flavor, but canned pineapple chunks can be used if drained well.
  • Cut the vegetables into similar sized pieces so they roast evenly.
  • Do not overcrowd the pan or the ingredients may steam instead of caramelize.
  • For extra sauce, double the glaze ingredients and drizzle a little more over the finished dish.
