- 1.5 pounds boneless skinless chicken thighs
- 2 cups fresh pineapple chunks
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 1 medium yellow onion, sliced
- 3 garlic cloves, minced
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sesame seeds
- 2 tablespoons green onions, sliced
Instructions
- Preheat the oven to 400°F and lightly oil a large sheet pan.
- In a mixing bowl, whisk together the soy sauce, honey, olive oil, cornstarch, minced garlic, salt, and black pepper until smooth.
- Arrange the chicken thighs on the sheet pan, leaving a little space between each piece.
- Add the pineapple chunks, chopped red bell pepper, chopped green bell pepper, and sliced onion around the chicken.
- Pour the sauce over the chicken and vegetables, then gently toss the vegetables so they are lightly coated.
- Bake for 25 minutes, or until the chicken is cooked through and the vegetables are tender with lightly caramelized edges.
- Sprinkle with sesame seeds and sliced green onions before serving.
- Serve hot with rice or noodles, spooning any extra glaze from the pan over each portion.
Notes
- Fresh pineapple gives the brightest flavor, but canned pineapple chunks can be used if drained well.
- Cut the vegetables into similar sized pieces so they roast evenly.
- Do not overcrowd the pan or the ingredients may steam instead of caramelize.
- For extra sauce, double the glaze ingredients and drizzle a little more over the finished dish.
