These Healthy Berry Oatmeal Protein Muffins are soft, naturally sweet, and packed with protein, fiber, and juicy berries. Perfect for a nutritious breakfast or a post-workout snack!

- 1 cup rolled oats
- 1 cup plain Greek yogurt
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup mixed berries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, mix the oats, Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until combined.
- Stir in the protein powder, baking powder, baking soda, cinnamon, and salt until well incorporated.
- Gently fold in the berries.
- Divide the batter evenly among the muffin cups, filling them about 3/4 full.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use a plant-based protein powder and dairy-free yogurt for a dairy-free option.
- Frozen berries work great—no need to thaw them.
- Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
