- 1/2 cup shredded coconut
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl whisk together eggs, maple syrup, coconut oil, milk, and vanilla extract until smooth.
- Lightly grease the parchment lined pan to prevent sticking.
- Add whole wheat flour, cocoa powder, baking powder, salt, and shredded coconut to the bowl and stir gently until a smooth batter forms.
- Pour the batter into the prepared pan and spread evenly. Bake for 22 to 25 minutes until a toothpick inserted in the center comes out mostly clean.
- Allow the cake to cool completely in the pan so the crumb sets nicely.
- Slice into squares and serve.
Notes
- Let the cake cool fully before slicing for clean snack squares.
- Sift cocoa powder if it has lumps for a smoother batter.
