- 1/2 tsp salt

- 1/4 cup honey or maple syrup
- 2 ripe bananas, mashed
- 1/3 cup plain Greek yogurt
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 tsp vanilla extract
- 1 cup finely chopped rhubarb
- Optional: 1/4 cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, mix mashed bananas, honey or maple syrup, Greek yogurt, applesauce, egg, and vanilla extract until well combined.
- Gradually add dry ingredients to wet ingredients and stir just until combined.
- Fold in chopped rhubarb and optional nuts if using.
- Pour batter into prepared loaf pan and spread evenly.
- Bake for 45–55 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

- For a dairy-free version, substitute coconut yogurt for Greek yogurt.
