Description

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup honey or maple syrup
  • 2 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup finely chopped rhubarb
  • Optional: 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a large bowl, mix mashed bananas, honey or maple syrup, Greek yogurt, applesauce, egg, and vanilla extract until well combined.
  4. Gradually add dry ingredients to wet ingredients and stir just until combined.
  5. Fold in chopped rhubarb and optional nuts if using.
  6. Pour batter into prepared loaf pan and spread evenly.
  7. Bake for 45–55 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • For a dairy-free version, substitute coconut yogurt for Greek yogurt.
