- 500 g boneless chicken, cut into bite sized pieces
- 3 tablespoons unsalted butter
- 1 tablespoon vegetable oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 400 g tomato puree
- 120 ml heavy cream
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 0.5 teaspoon ground turmeric
- 1 teaspoon sugar
- 1 teaspoon salt
Instructions
- Heat a large skillet over medium heat.
- Add vegetable oil and butter, allowing the butter to melt gently.
- Add chopped onion and cook until soft and lightly golden.
- Stir in garlic and ginger, cooking briefly until fragrant.
- Add garam masala, cumin, coriander, paprika, turmeric, sugar, and salt, stirring well.
- Pour in tomato puree and simmer for 10 minutes.
- Add chicken pieces and cook until tender and fully cooked.
- Lower the heat, add heavy cream, and stir until smooth and creamy.
- Taste and adjust seasoning, then serve warm.
Notes
- Keep heat low after adding cream to prevent curdling.
- The flavors deepen if the dish rests for a few minutes before serving.
