A hearty and comforting homemade chili made with ground beef, beans, tomatoes, and warm spices simmered together for a rich and flavorful one pot meal.

- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 1.5 pounds ground beef
- 2 tablespoons tomato paste
- 1 can (28 ounces) diced tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 1.5 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Place a large Dutch oven over medium heat and add olive oil.
- Add the diced onion and garlic. Sauté for about 5 minutes until softened and fragrant.
- Stir in the tomato paste, chili powder, cumin, paprika, salt, and black pepper. Cook for 2 minutes to toast the spices.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Stir in the diced tomatoes, kidney beans, and black beans.
- Bring to a simmer, then reduce the heat and cook for 30 to 45 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. Serve warm with your favorite toppings.
Notes
- Letting the chili rest for a few minutes after cooking deepens the flavor.
- Add a splash of broth if the chili becomes too thick.
- A squeeze of lime juice at the end brightens the flavor.
