- 1/2 cup yellow cornmeal

- 1/4 tsp salt
Instructions
- Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, honey, and sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until combined.
- In a separate bowl, whisk together the flour, cornmeal, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoons of dough onto the prepared baking sheet, spacing them a few centimeters apart.
- Bake for 8–10 minutes or until the edges are lightly golden.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For a chewier texture, slightly underbake the cookies and allow them to finish cooking on the baking sheet.
- Drizzle with extra honey or serve with a pat of soft butter for a Southern-inspired twist.
- Store in an airtight container at room temperature for up to 3 days.
