- 2 boneless skinless chicken breasts
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 cup cooked white or brown rice
- 1 avocado, diced
- 2 tablespoons chopped fresh cilantro
- 1/4 cup diced red onion (optional)
- Extra lime wedges for garnish
Instructions
- In a small bowl, whisk together honey, lime juice, olive oil, garlic, chili powder, salt, and pepper.
- Place chicken breasts in a shallow dish or ziplock bag and pour marinade over them. Let marinate for at least 30 minutes (or up to 2 hours) in the fridge.
- Grill or pan-cook the chicken over medium heat for 5–7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.
- Prepare cooked rice and mix in chopped cilantro and red onion (if using).
- To assemble the stack: layer a portion of rice at the bottom, top with sliced chicken, then add diced avocado. Garnish with lime wedges and extra cilantro.
- Serve immediately, optionally drizzling with extra lime juice or a touch of olive oil.
