Description

A vibrant and fresh dish featuring honey lime marinated chicken layered over fluffy rice and topped with creamy avocado. A perfect balance of sweet, tangy, and savory flavors in a beautiful stack presentation.


Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup cooked white or brown rice
  • 1 avocado, diced
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup diced red onion (optional)
  • Extra lime wedges for garnish

Instructions

  1. In a small bowl, whisk together honey, lime juice, olive oil, garlic, chili powder, salt, and pepper.
  2. Place chicken breasts in a shallow dish or ziplock bag and pour marinade over them. Let marinate for at least 30 minutes (or up to 2 hours) in the fridge.
  3. Grill or pan-cook the chicken over medium heat for 5–7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.
  4. Prepare cooked rice and mix in chopped cilantro and red onion (if using).
  5. To assemble the stack: layer a portion of rice at the bottom, top with sliced chicken, then add diced avocado. Garnish with lime wedges and extra cilantro.
  6. Serve immediately, optionally drizzling with extra lime juice or a touch of olive oil.
