Description

Honey Roasted Carrots are sweet, tender, and caramelized with honey and a hint of thyme, making for an irresistible side dish that’s both simple and delicious.


Ingredients

  • 1 lb carrots, peeled and cut into sticks or rounds
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the carrots with olive oil, honey, cinnamon, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on the prepared baking sheet. Sprinkle with thyme.
  4. Roast for 25–30 minutes, stirring halfway through, until the carrots are tender and caramelized.
  5. Remove from the oven and serve warm as a side dish.

Notes

  • For an extra touch, drizzle with a bit more honey after roasting.
  • You can add a sprinkle of orange zest or a dash of lemon juice for a citrusy flavor.
