- 2 tablespoons honey
- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon black pepper
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the carrots with olive oil, honey, cinnamon, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet. Sprinkle with thyme.
- Roast for 25–30 minutes, stirring halfway through, until the carrots are tender and caramelized.
- Remove from the oven and serve warm as a side dish.
Notes
- For an extra touch, drizzle with a bit more honey after roasting.
- You can add a sprinkle of orange zest or a dash of lemon juice for a citrusy flavor.
- If using baby carrots, you may need to reduce the roasting time slightly.
