- 500g squid rings, fresh and cleaned
- 1 cup cornflour
- 1/2 cup all-purpose flour
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons butter
- 4 cloves garlic, finely chopped
- 2 green chilies, sliced
- 1 medium onion, sliced
- 1 tablespoon soy sauce
- 2 stalks spring onions, chopped
- Vegetable oil, for frying
Instructions
- Preheat oil in a skillet or wok over medium-high heat.
- In one bowl, mix cornflour, flour, salt, and black pepper. In another bowl, whisk the egg and coat the squid rings before dredging them in the flour mixture.
- Line a plate with paper towels for draining after frying.
- Fry squid rings in batches for 2–3 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels.
- In a separate pan, melt butter and sauté garlic, onion, and green chilies until fragrant. Add soy sauce and toss in the fried calamari.
- Sprinkle chopped spring onions over the top.
- Serve hot and enjoy immediately.
Notes
- Do not overcook squid, it turns rubbery quickly.
- Always fry in small batches to keep the oil hot.
- Add butter at the end to avoid burning.
- A squeeze of lime enhances flavor beautifully.
