Description

Crispy, buttery, and full of flavor, this Hot Butter Calamari is a quick and crowd-pleasing seafood dish that combines tender squid rings with garlic, chilies, and golden butter.


Ingredients

  • 500g squid rings, fresh and cleaned
  • 1 cup cornflour
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons butter
  • 4 cloves garlic, finely chopped
  • 2 green chilies, sliced
  • 1 medium onion, sliced
  • 1 tablespoon soy sauce
  • 2 stalks spring onions, chopped
  • Vegetable oil, for frying

Instructions

  1. Preheat oil in a skillet or wok over medium-high heat.
  2. In one bowl, mix cornflour, flour, salt, and black pepper. In another bowl, whisk the egg and coat the squid rings before dredging them in the flour mixture.
  3. Line a plate with paper towels for draining after frying.
  4. Fry squid rings in batches for 2–3 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels.
  5. In a separate pan, melt butter and sauté garlic, onion, and green chilies until fragrant. Add soy sauce and toss in the fried calamari.
  6. Sprinkle chopped spring onions over the top.
  7. Serve hot and enjoy immediately.

Notes

  • Do not overcook squid, it turns rubbery quickly.
  • Always fry in small batches to keep the oil hot.
  • Add butter at the end to avoid burning.
  • A squeeze of lime enhances flavor beautifully.
