  • 1 cup shredded mozzarella cheese

  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Place grated zucchini in a bowl, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Squeeze out as much liquid as possible using a clean towel or cheesecloth.
  3. In a large bowl, combine the drained zucchini, mozzarella, Parmesan, breadcrumbs (if using), egg, garlic, pepper, and Italian seasoning. Mix until well combined.
  4. Transfer the mixture onto the prepared tray and spread it evenly into a thick layer, shaping it like a rectangle or oval.
