Instructions
- Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
- Place grated zucchini in a bowl, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Squeeze out as much liquid as possible using a clean towel or cheesecloth.
- In a large bowl, combine the drained zucchini, mozzarella, Parmesan, breadcrumbs (if using), egg, garlic, pepper, and Italian seasoning. Mix until well combined.
- Transfer the mixture onto the prepared tray and spread it evenly into a thick layer, shaping it like a rectangle or oval.
- Brush the top with olive oil and bake for 20–25 minutes or until golden and bubbly.
