Description

A classic Italian bruschetta, adapted from Vincenzo’s Plate, featuring toasted bread topped with ripe tomatoes, garlic, basil, and extra virgin olive oil for a refreshing and vibrant appetizer.


Ingredients

  • 4 medium ripe tomatoes, diced
  • 1 baguette or rustic Italian loaf, sliced
  • 2 cloves garlic, peeled
  • 3 tablespoons extra virgin olive oil
  • A handful of fresh basil, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground

Instructions

  1. Preheat your oven to 400°F (200°C) or heat a grill pan.
  2. In a bowl, combine diced tomatoes, chopped basil, salt, pepper, and a drizzle of olive oil. Set aside.
  3. Arrange bread slices on a baking tray or grill pan.
  4. Lightly brush each slice with olive oil.
  5. Toast bread until golden and crisp, about 5–7 minutes.
  6. While bread is still hot, rub each slice with garlic and top with the tomato mixture.
  7. Drizzle with extra olive oil and serve immediately.
