- 12 ounces wide rice noodles
- 1 pound chicken breast, thinly sliced
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium zucchini, sliced
- 1 medium onion, sliced
- 1 cup fresh basil leaves, loosely packed
- 2 tablespoons olive oil
- 1/4 cup soy sauce
- 2 tablespoons balsamic vinegar
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil. Cook the rice noodles according to package instructions until just tender, then drain and set aside.
- In a small bowl, combine soy sauce and balsamic vinegar. Stir and set aside.
- Heat olive oil in a large skillet over medium high heat. Add sliced chicken and cook for 5 to 7 minutes until lightly golden and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add onion, garlic, red bell pepper, yellow bell pepper, and zucchini. Sauté for 4 to 5 minutes until slightly tender but still vibrant.
- Return the cooked chicken to the skillet. Add the drained noodles and pour in the sauce mixture. Toss everything together until evenly coated and heated through.
- Stir in fresh basil, salt, and black pepper. Cook for 1 additional minute to blend the flavors.
- Serve hot and enjoy.
Notes
- Do not overcook the noodles, they should remain slightly firm before adding to the skillet.
- Add basil at the end to preserve its fresh flavor and bright color.
- You can substitute chicken with tofu for a vegetarian option.
- A pinch of red pepper flakes can be added for extra heat.
