Description

A bold and vibrant noodle dish made with wide rice noodles, tender sliced chicken, colorful bell peppers, zucchini, and fresh basil tossed in a savory soy and balsamic sauce. It is comforting, flavorful, and perfect for a quick weeknight dinner.


Ingredients

  • 12 ounces wide rice noodles
  • 1 pound chicken breast, thinly sliced
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 medium onion, sliced
  • 1 cup fresh basil leaves, loosely packed
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rice noodles according to package instructions until just tender, then drain and set aside.
  2. In a small bowl, combine soy sauce and balsamic vinegar. Stir and set aside.
  3. Heat olive oil in a large skillet over medium high heat. Add sliced chicken and cook for 5 to 7 minutes until lightly golden and fully cooked. Remove from the skillet and set aside.
  4. In the same skillet, add onion, garlic, red bell pepper, yellow bell pepper, and zucchini. Sauté for 4 to 5 minutes until slightly tender but still vibrant.
  5. Return the cooked chicken to the skillet. Add the drained noodles and pour in the sauce mixture. Toss everything together until evenly coated and heated through.
  6. Stir in fresh basil, salt, and black pepper. Cook for 1 additional minute to blend the flavors.
  7. Serve hot and enjoy.

Notes

  • Do not overcook the noodles, they should remain slightly firm before adding to the skillet.
  • Add basil at the end to preserve its fresh flavor and bright color.
  • You can substitute chicken with tofu for a vegetarian option.
  • A pinch of red pepper flakes can be added for extra heat.
