- 4 cups chicken broth
- 8 ounces cream cheese, softened
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 teaspoon paprika
- Salt and pepper to taste
- 1½ cups cooked shredded chicken
- Green onions for garnish
- Extra jalapeño slices for garnish
Instructions
- Set a large soup pot over medium heat.
- Melt butter, then sauté onion, garlic, and jalapeños until softened, about 5 minutes.
- Add chicken broth and bring to a gentle boil. Reduce heat and stir in cream cheese. Whisk until smooth.
- Pour in heavy cream, shredded chicken, paprika, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
- Add shredded cheddar cheese slowly, stirring until fully melted and soup thickens.
- Taste and adjust seasoning if needed. Ladle into bowls.
- Garnish with extra cheese, sliced jalapeños, and green onions. Serve hot.
