Ingredients

  • Ground chicken thighs, 1 1/2 pounds
  • Garlic powder, 1 teaspoon
  • Onion powder, 1 teaspoon
  • Paprika, 1 teaspoon
  • Kosher salt, 1 teaspoon
  • Black pepper, 1/2 teaspoon
  • Olive oil, 1 tablespoon
  • Ripe avocados, 2
  • Fresh lime juice, 1 tablespoon
  • Finely chopped red onion, 1/4 cup

  • Burger buns, toasted, 4
  • Large lettuce leaves, 4

Instructions

  1. Preheat a grill pan or skillet over medium high heat.
  2. In a mixing bowl, gently combine ground chicken with garlic powder, onion powder, paprika, salt, and pepper. Form 4 even patties.
  3. Brush or drizzle the hot pan with olive oil to lightly coat the surface.
  4. Make the guacamole by mashing avocados with lime juice, red onion, cilantro, and tomato. Season to taste with a pinch of salt.
  5. Sear patties for 3 to 4 minutes per side, then reduce heat and cook until the internal temperature reaches 165°F, about 8 to 10 minutes total depending on thickness.
  6. Toast the buns, then layer each with a lettuce leaf, a chicken patty, and a generous scoop of guacamole.
  7. Serve immediately with your favorite sides.
