Ingredients
- Ground chicken thighs, 1 1/2 pounds
- Garlic powder, 1 teaspoon
- Onion powder, 1 teaspoon
- Paprika, 1 teaspoon
- Kosher salt, 1 teaspoon
- Black pepper, 1/2 teaspoon
- Olive oil, 1 tablespoon
- Ripe avocados, 2
- Fresh lime juice, 1 tablespoon
- Finely chopped red onion, 1/4 cup
- Chopped cilantro, 2 tablespoons
- Small tomato, diced, 1
- Burger buns, toasted, 4
- Large lettuce leaves, 4
- Optional toppings, sliced jalapeños or cheese or salsa, to taste
Instructions
- Preheat a grill pan or skillet over medium high heat.
- In a mixing bowl, gently combine ground chicken with garlic powder, onion powder, paprika, salt, and pepper. Form 4 even patties.
- Brush or drizzle the hot pan with olive oil to lightly coat the surface.
- Make the guacamole by mashing avocados with lime juice, red onion, cilantro, and tomato. Season to taste with a pinch of salt.
- Sear patties for 3 to 4 minutes per side, then reduce heat and cook until the internal temperature reaches 165°F, about 8 to 10 minutes total depending on thickness.
- Toast the buns, then layer each with a lettuce leaf, a chicken patty, and a generous scoop of guacamole.
- Serve immediately with your favorite sides.
